QUICK AND EASY
Vegan recipes from the goat.
SLOPPY JOES
INGREDIENTS

1 TBSP - olive oil
1 small onion - diced
1 clove garlic - minced
1/4 tsp - chili powder
1/4 tsp - salt
1 can - kidney beans - rinsed
1/2 cup - tomato sauce
1/4 cup - ketchup

several whole wheat hamburger
buns or whole wheat bread
DIRECTIONS

In a medium sauce pan, saute the onion in the olive
oil for several minutes. Add the garlic, chili powder
and salt. Saute for another 30 seconds.

Next add the kidney beans, tomato sauce, and
ketchup. Simmer for 10 minutes and serve.

This recipe makes 3 to 4 servings.
Scale up or down for the quantity you need.
COMMENTS
These are just awesome. You have got to try them. The kids asked if
they were vegan and when we said yes, their response was, "That's
odd, most vegan food taste weird! Now can you beat that?

Note: We try to use canned beans that are low or no sodium. If you can't
find them you can use the regular beans and adjust or leave out the salt
to your liking.
